CDC Vessel Sanitation Program 2011 Operations Manual

The CDC Vessel Sanitation Program helps the cruise ship industry prevent and control the introduction, transmission, and spread of gastrointestinal illnesses on cruise ships. This is accomplished by US Public Health Service officers boarding the ships and making intensive evaluation studies and inspections utilizing detailed forms and procedures set forth in the Vessel Sanitation Program 2011 Operations Manual. Subject areas include acute gastroenteritis surveillance reports, specimen collection, and isolation of sick people both crew and passengers; potable water sources, halogena- tion and pH control, monitoring, storage tanks, water piping, water hoses, potential sources of contamination, chemical treatment, microbiological monitoring, water distribution systems, and back flow prevention devices; recreational water facilities seawater sources, recirculation systems, halo- genation, monitoring, and safety; food safety personnel, cleanliness, and hygienic practices; food sources, receiving temperatures, hand contamination by employees, food and ingredient contamination, use of ice, equipment storage and cleanliness, storage and preparation, and display and service; food destruction of pathogens and parasites, reheating, holding temperatures and times, cooling and holding temperatures and times, and removal of adulterated products; food equipment and utensils design and construction for multiple use, and single service use and disposal; ware washing design, construction, use, maintenance, and temperatures; poisonous and toxic materials storage, use, and disposal; hand washing and toilet facilities installation, maintenance, cleanliness, and use of disinfectants; solid waste storage and disposal; liquid waste pipelines and disposal; plumbing and backflow preventers; lighting; ventilation; integrated pest management; housekeeping; child activity centers; heating, ventilation, and air-conditioning systems, fountains, misting systems, humidifiers, and showers.
